Traditional Bolognese

Serves About 6

  • ¾ cup bacon, diced
  • 1 large yellow onion, finely chopped
  • 1 stalk celery, finely chopped
  • 1 medium carrot, finely chopped
  • 1/3 cup butter
  • ¾ lb. (12oz) ground beef
  • ¼ lb. (4oz) ground pork
  • ¼ lb. (4oz.) pork sausage
  • 1/3 tsp. black pepper
  • ½ cup red wine
  • 2 (14oz.) cans diced tomatoes
  • 1½ cups milk
  • Salt, to taste

In a large sauté pan set over medium heat, combine bacon, onion, celery, carrot and butter. Sauté until onion is golden, about 5-8 minutes. Add beef, pork and pepper, brown meats.

Add wine and cook for 5 minutes until wine has cooked off. Stir in tomatoes. Let sauce boil for 10 minutes. Add milk and season sauce with salt. Turn heat to a simmer. Cover sauce and let simmer for 1-2 hours stirring occasionally. The longer the sauce is let to simmer, the more concentrated the flavors become.

*I commonly use a Cabernet Sauvignon
