Strawberry Capresse Pasta Salad

Strawberry Capresse Salad

Makes About 4-6 Servings

  • 1 lb. fresh strawberries
  • 1 lb. medium shell pasta
  • 8oz, fresh mozzarella
  • 1/3 cup fresh basil, julliened
  • 1/2 red onion, thinly sliced
  • 1/4 cup balsamic vinaigrette

Cook pasta according to package directions in well salted water. Drain and set aside to cool while you prepare the rest of the salad.

Hull and quarter strawberries, place in a large mixing bowl.

Slice mozzarella into ½-inch cubes and add to the strawberries.

Add basil, red onion and cooled pasta to the strawberries, toss well to combine. Refrigerate until serving.

Just before serving drizzle balsamic vinaigrette over salad and toss gently to coat salad evenly.
