Sticky Toffee Frosting

Toffee is one of my favorite sweets; I love the dark caramelized, almost burnt sugar flavor it offers in every crunchy bite. Imagine that same flavor mixed with the goodness of cheese. I give you Sticky Toffee Cheese! This English dessert cheese is a semi-hard cow’s milk cheese with the indulgent flavors of brown sugar, caramel, cinnamon and a hint of nutmeg all mixed with dates and raisins. This sweet dessert cheese was inspired by a typical British steamed pudding of the same flavors, Sticky Toffee Pudding. The pudding is often served with heavy cream or ice cream. You should be able to find this cheese in the specialty/imported cheese section of your supermarket.

The cheese itself is rich and dense and is perfect for serving at brunch, as a snack, on a dessert cheese platter, or for an after-dinner treat. The warm cozy feeling these flavors create for me inspired two recipes; the first being a frosting. The second is a fondue recipe, but that’s for another day.

This frosting is extremely versatile. My first use of this frosting was on pumpkin bars I made at work over the holiday season. You could make a layered cake and use Sticky Toffee Cheese Frosting as the filling. What a wonderful surprise for your guests to find in what they thought was a simple holiday cake. Try frosting gingerbread cookies or sugar cookies with the sticky toffee cheese frosting to boost the flavor. For a quick snack, pile the frosting on saltine crackers: Yum!

“Wait, saltines?” you ask? Yes! Stop giving me that crazy person look. Saltines and frosting were a favorite after-school snack for my siblings and me growing up. I don’t know many others who also grew up on saltines and frosting as a dessert/snack. What can I say, my mom is unique. Update: my mom informed me that she too came home from school to saltines and powdered sugar frosting as a snack before it was farm chore time. And according to my Grandma, she too would have saltines and frosting made by her mother as a afternoon snack. I guess it’s a tradition! If you have never had Sticky Toffee Cheese, I recommend locating some at your nearest specialty/imported cheese case. You will be very mpressed! Do you fondue? Pumpkin Bars with Sticky Toffee Frosting

 

Sticky Toffee Frosting

By The Spoonful

Makes About 2 cups

  • 3/4 cup Sticky Toffee Cheese, room temperature
  • 1 cup salted butter, room temperature
  • 4 cups powdered sugar

With a stand or hand mixer with fitted with the paddle attachment, mix together the sticky toffee cheese with the butter until mixture is well combined and smooth.

Add powdered sugar, and cream until smooth and fluffy.

Use to frost pumpkin or banana bar/cookies, or favorite cake.
