I wanted to impress some guests at a fondue party for a work event. I’ve shared about Sticky Toffee Cheese with you before with its yummy flavors of brown sugar, caramel, cinnamon and raisins in my Sticky Toffee Frosting recipe. Sticky Toffee seemed like the elegant type dish to bring to a retro party to make people ohh and ahh. I took the custard-like concept I found in many other dessert fondue recipes to make my own with this sweet cheese. This liquid goodness of a dessert is perfect for dipping sweet breads, honey wheat pretzels, strawberries or pita chips. Missed out on my Sticky Toffee Cheese Frosting post? Sticky Toffee Cheese Fondue

  • 1 1/2 cups sticky toffee cheese
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 2 Tbsp. dark rum
  • 1/2 cup mascarpone cheese
  • 2 egg yolks

In a large sauce pan over medium-low heat melt sticky toffee cheese, mascarpone and heavy cream together while stirring continually. Stir until mixture has melted and is smooth. Slowly whisk in powdered sugar and rum. Cook for 1 minute to cook off the alcohol.

In a small bowl whisk egg yolks together. Temper yolks by gradually add ½ cup melted cheese mixture. Slowly add the tempered yolks to cheese mixture.

Pour mixture into a warm fondue pot or crock pot and keep warm over low.
