Steak with Strawberry-Balsamic Reduction w Gorganzola

Sirloin Steak with Strawberry-Balsamic Reduction and Gorgonzola

Makes 4 Servings

  • 4 (4oz.) beef sirloin steaks
  • ¼ cup strawberry jam
  • Salt/pepper, to taste
  • 1 cup fresh strawberries, sliced
  • 1½ cups balsamic vinegar
  • ¼ cup gorgonzola cheese, crumbled

In a large nonstick sauce pan bring balsamic vinegar to a low boil. Cook liquid until it has reduced by half, about 5 minutes. Whisk in strawberry jam until it has dissolved. Reduce heat to low and add half the fresh strawberries. Season both sides of steak well with salt and pepper. Grill steaks to desired doneness.

For a medium rare: 4 minutes on each side or until meat thermometer reaches 135F. For a Medium: 5 minutes on each side or until meat thermometer reaches 145F.

To serve: add remaining fresh strawberry slices to balsamic reduction. Spoon desired amount of sauce and strawberries over each steak so that the some strawberries sit on top of the steak and others fall to the side. Sprinkle Gorgonzola cheese over strawberries making a small blue cheese mound.

*Can use reduced-sugar or sugar free jam. May substitute raspberry jam for strawberry jam. Can also substitute fresh raspberries for fresh strawberries.
