Irish Soda Bread

Irish Soda Bread

Makes 1 Loaf

  • 4 cups flour
  • 1 1/2 tsp. baking soda
  • 2 cups buttermilk
  • 1 tsp. salt

Preheat oven to 425F.

In a large bowl sift together all the dry ingredients. Make a whell in the middle and add the buttermilk. Stir to form a sticky dough. Place dough on floured surface and lightly knead for 1 minute. Too much kneading allows for gas to escape. Shape dough into a round flat shape. Place into well greased round cake pan. With a sharp knife cut a cross in the top of the dough.

Cover the pan with another pan to create a sort of dutch oven and bake for 30 minutes. Remove cover and bake for an additional 15 minutes. The curst will be a nice golden brown and the bottom of the bread will have a hollow sound when tapped-this means the bread is done.

Cover the bread in a tea towel and lightly sprinkle water on the cloth to keep the bread moist.
