Chipotle Compound Butter

I love the smokiness of chipotle. I was even on a big chipotle pepper kick for a while. I added chipotle peppers, seeds removed, and extra adobo sauce to everything. To add that great smokey chipotle flavor to my steak without too much of the spicy heat I decided that making a chipotle compound butter would be mouthwatering. I added fresh cilantro to give it a more Mexican flare, that and I love cilantro and add it to anything I can.

I prefer a grilled steak cooked to a beautiful medium-rare. How do you prefer your steak? Remember that compound butters are wonderful on more than steak….try it with pork and chicken too. Even try my Chipotle Compound Butter with corn on the cop, as a dollop on mashed potatoes or served with steamed vegetables. Chipotle Butter

By The Spoonful

Makes About 3/4 Cup

  • 1/2 cup unsalted butter, room temperature
  • 1 Tbsp. chipotle peppers, seeded, diced
  • 2 tsp. lime juice
  • 2 tsp. adobo sauce
  • 2 Tbsp. fresh cilantro, finely chopped
  • salt, to taste

Mix ingredients together until well mixed.

Using plastic wrap roll butter mixture into a log. Keep in fridge until needed.

Uses: Steak topper, corn on the cob, corn bread and/or dinner rolls.

*Adobo sauce is the sauce that chipotle peppers are canned in.
