Ham & Gruyere Salad

Makes About 4 Servings

  • 1 onion, thinly sliced
  • 3 tsp. Dijon mustard
  • 2 tsp. red wine vinegar
  • ¼ tsp. salt
  • ¼ tsp. black pepper
  • ½ cup olive oil
  • 1 lbs. smoked or Black Forest ham
  • ½ lb. gruyere cheese
  • ¾ cup flat leaf parsley, chopped

Cut ham and cheese into uniform matchstick strips. Set aside.

In a large bowl whisk together mustard, vinegar, salt and pepper. Slowly add oil while whisking until dressing comes together.

Add ham, cheese and parsley to the dressing and toss to combine.

Chill until serving.
